The Krishna Meal

Kim from Daytona Beach in Florida wrote me a few days ago with this request:

"I'm trying to locate a Hare Krishna recipe that was served weekly at the University of Florida in Gainesville. It was simply known as the "Krishna Meal".

It featured a grain...more than likely rice or couscous or a combination, along with pine nuts, raisins, small diced red peppers (very few), was yellow in color and somewhat sweet in taste. I'd like to prepare this for a friend that has very fond memories of the dish. thanks in advance for your assistance. kb"

My reply:

Well it sounds like a specialty of the Gainsville devotees. I would say it is not a standard recipe. Maybe you can get in contact with the Gainesville Hare Krishna temple.

If I was to cook it according to your description of contents I would say you would need:

1 cup basmati rice
1.75 cups water
tablespoon olive oil
1 teaspoon turmeric powder
1 teaspoon salt
a scant 1/4 cup toasted pine nuts
a scant1/4 cup golden raisins
a scant1/4 cup finely red bell peppers
maybe a scant 1/4 cup cooked green peas
little sprinkle cumin powder
couple cloves
tiny piece cinnamon stick

I would bring the water to the boil, along with the salt, turmeric, cumin, cloves, cinnamon, with tight lid. Meanwhile in another pot, heat oil, add rice, bell pepper, toast for 1 minute. Add boiling water/spices etc.

Simmer with tight lid over small heat for 20 minutes, remove from heat, keep lid on. 5 minutes later fold in cooked peas, raisins and pine nuts. Let me know how it goes. Best wishes!
