Yesterday's cookery class marks the half-way point in my Belgium sojourn. My team continues to display extraordinary enthusiasm.
Here's some morsels from lunch; alu vadas - mashed potato puffs stuffed with coriander, coconut, lime juice, raisins and chili, dipped in spicy batter and fried until crisp.
Dessert was real burfi - milk reduced with cream and butter, cardamom, pecans and walnuts until it turned to fudge.
