I'm having a 'Big Day In' today, fine-tuning my menus for the next few classes here in Perth and regional Western Australia. I've chosen this winning combination for next Saturday's class at West Coast College of TAFE to be held at Subiaco Campus:
Vegetarian World Food
Fragrant South Indian Toor Dal Soup (Rasam) Served with Steamed Basmati Rice
Sweet Chili Panir Steaks with Sweet Potato Mash & Rocket Salad
BBQ Asparagus with Semi-dried Tomato & Macadamia Chutney
Israeli Chickpea Croquettes (Falafel)
Chickpea and Sesame Paste Dip (Hummus bi Tahina)
Greek-style Eggplant Casserole (Moussaka)
Creamy Cardamom-infused Condensed Yogurt Dessert with Pistachios and Saffron Syrup (Shrikhand)
While I'm in the mood, I'll have to either ponder over or decide on menus for two classes at Amano's Cookery School in Cottesloe, my one-day workshop at Challenger TAFE, plus my culinary excursions to Bunbury, Margaret River and Mandurah.
