I've got a problem with one of your recipes. I went to a health food shop on Hong Kong Island especially and purchased some hulled millet today, to prepare your Millet Pilaff with Corn, Peppers and Pine Nuts.
I followed the recipe exactly, but the millet ended up totally uncooked and as hard as grit. I fed it to my pet parrot. Hulled millet is millet with the hull on, right? Or have I got it wrong? Help!"

My reply:
Sorry Sandra, but you've got it wrong. Hulled millet, pictured, is millet with hull removed. You bought unhulled millet, which is good for parrots but not for cookery. The hard hull, or outer coating, does not allow the water to enter easily, and it takes a very long time to cook.
Try the recipe again with the real hulled millet and it will be a grand success! Remember, failure is the pillar of success. Happy cooking!
