I held a one-day cookery workshop at West Coast College of Tafe (Tertiary and Further Education) at Subiaco Campus on Saturday.
This was our fabulous "World Food" menu:
Fragrant South Indian Toor Dal Soup (Rasam)
Served with Steamed Basmati Rice
Chili Panir Steaks with
Sweet Potato Mash & Rocket Salad
BBQ Asparagus with Semi-dried Tomato & Macadamia Chutney
Israeli Chickpea Croquettes (Falafel)
Chickpea and Sesame Paste Dip (Hummus bi Tahina)
Greek-style Eggplant Casserole (Moussaka)
Creamy Cardamom-infused Condensed Yogurt Dessert with Pistachios and Saffron Syrup (Shrikhand)
We were practically eating all day. Here we are plating-up the first entree-size taster - BBQ Asparagus with Semi-dried Tomato & Macadamia Chutney - as brunch.

The smokey flavour of the asparagus married well with the rich tartness of the semi-dried tomato and macadamia chutney. The creamy shavings of Grana Padano topped it off. Here's Leonie poised in mid-bite.

Our second entree-style brunch item was a stunner. Here we are plating up the Chili Panir Steaks with Sweet Potato Mash & Rocket Salad

It tasted as good as it looks!

I shared my recipes for Hummus, Falafel, Pita and Salad - a great middle-eastern combination.

The all-girl crew had a great day, and went home energised and enthusiastic to 'try this at home'.
